บทคัดย่อ

The post-harvest ripening of three plantain cultivars (Musa spp., AAB group).

Postharvest changes were investigated in the French plantain cv. Obino L'Ewai, the false horn plantain cv. Agbagba and the horn plantain cv. Ubok Iba. Fruits were imported from Nigeria and allowed to ripen at 27 deg C. Ripening was most rapid in Obina L'Ewai and slowest in Agbagba. Weight loss after 11 days was significantly greater in Obina L'Ewai, which had the highest stomatal density, than in the other cultivars. Pulp softening occurred at an earlier stage of ripening (based on peel colour) in Agbagba than in the other cultivars. In all cultivars, the failure to stain for starch was first noticeable in the locular tissues; this occurred at the yellow stage in Obina L'Ewai but at the nearly black stage in the other cultivars.
