Sugar cane deterioration and its implications in the factory.

The dextran content of sugarcane has previously been used as an indicator of the degree of deterioration. A new indicator is proposed, the content of oligosaccharides, as determined by a method which is described; this is based on the difference between the saccharide contents after exclusion by Sephadex G-10 and G-50 columns, corresponding to the MW range about 700-10 000. The oligosaccharide content % Brix of primary juice increased almost linearly (r = 0.92) with the delay (12-66 h) between cane burning and crushing. Effects of the presence of oligo- and polysaccharides (mainly dextran) in cane on the ease and results of its processing were studied. The resulting high viscosities led to long retention times, extra colour formation, crystal deformation and impaired molasses exhaustion.
