บทคัดย่อ

Retardation of tomato ripening by ethanol.

Ethanol treatment depressed both the synthesis and activity of ethylene in cv. Fakel fruits. The ethylene precursor 1-aminocyclopropane-1-carboxylic acid (ACC) accumulated in the treated fruits and delayed ripening. A short period in anaerobic condition (<1% oxygen) also delayed ripening; it increased ethanol content and reduced ethylene production and ACC content. A suitable concentration of ethanol may be induced, by exposure to ethanol vapour or anaerobiosis, for postharvest treatment to delay ripening.
