Commercial, ecological and agrotechnological considerations have renewed interest in the use of physical rather than chemical means for maintaining postharvest quality of horticultural crops. The effects of prestorage heat treatments on storage pathogens, on the development of physiological disorders, on postharvest fruit ripening and on the effectiveness of Ca treatments are reviewed.
