Postharvest senescence and physiology of leafy vegetables.

A review. Senescence is a developmental change that leads to the loss of functioning and then to death of an organ or organism. The symptoms of senescence are well known in leaves, with senescence being marked by a decline in chlorophyll, protein, RNA, DNA and growth promoters, and by an increase in hydrolytic enzymes and growth inhibitors. The mechanisms that regulate senescence are little understood. Most of the research has been directed towards the easily detected senescent changes in the chloroplasts, with little attention to the earlier cytoplasmic changes. Work done has generally been on excised cereal leaves with some work on temperate leafy vegetables, especially lettuce. The senescence process would be expected to be modified under postharvest handling conditions with different tissue response being a significant factor. This vegetable research has addressed the response to postharvest treatments, not the mechanism of senescence. There is little or no research on senescence of tropical leafy vegetables under postharvest conditions.
