This work was carried out to evaluate the tolerance of pawpaws to low O2 atmospheres used to control insects and to study the effects of this treatment on the anaerobic respiratory enzymes of the fruit. Pawpaw cv. Sunrise fruits were exposed to a continuous flow of an atmosphere containing <0.4% O2 (balance was N2) for 0-5 days at 20 deg C. Fruits showed major decay and some had developed off-flavours after 3 days in low O2 followed by 3 days in air at 20 deg . Intolerance of fruits to low O2 was correlated with an increase in the activity of pyruvate decarboxylase and lactate dehydrogenase but not with an increase in the activity of alcohol dehydrogenase. It was concluded that insecticidal atmospheres of <0.4% O2 can be used as a quarantine insect control treatment for pawpaws for periods <3 days at 20 deg without the risk of significant fruit injury.
