Regional harvest maturity standards, storage properties and ripening characteristics of pear cv. Santa Maria fruits were investigated during 1985-86 and 1986-87. Fruit growth, flesh firmness, soluble solids, colour change, chlorophylls, pH, titratable acidity, starch content and quality were evaluated at weekly harvests during the 3-week harvest period. Compared with the first pick, increase in diameter and in length during successive harvests reached 17.8 and 13.3%, respectively, in the first season and 47.0 and 31.7%, respectively, in the second season, with an increase in volume of almost 400%. Optimum harvest time coincided with fruit firmness of 5.0-5.4 kg and the skin having a typical green ground colour. Fruits harvested at this optimum time could be stored successfully for 5 months at 0 deg C.
