Volatile production by Jonagold apple fruits harvested in 3 years on different dates was studies during postharvest ripening in air at 20 deg C. The onset of volatile production was delayed in early harvested fruits and was lower in early harvested fruits than in later harvested fruits. Volatile production was lower in very late harvested fruits than in fruits harvested on the normal date of harvest. A large variation in the total volatile production between different years was found. Some general trends in the formation of individual esters were found. The alcohol moiety in the esters appeared to influence the shape of the production curves. Propyl esters developed in a sigmoidal curve, not levelling off until late in senescence, while most other esters peaked shortly after onset of production. If either the alcohol moiety was 2/3-methylbutanol or the carboxylic acid moiety was 2/3-methylbutanoic acid, a seriously reduced production of the ester was seen in late harvested fruits compared with other esters.
