บทคัดย่อ

Mycology and spoilage of hazelnuts.

Xerophilic fungal spp. (28) were isolated from whole hazelnut kernels from Turkey and identified. Most isolates were Aspergillus, Eurotium and Penicillium spp. A high incidence of Wallemia sebi was found. A. flavus was detected in 1985 and 1988 crops. E. repens and P. crustosum were capable of causing considerable spoilage of hazelnut oil and would be expected to cause spoilage in the nuts. Roasting was an effective control measure.
