บทคัดย่อ

Cultivation of shiitake mushroom on synthetic logs in the United States.

An overview is given of the shiitake [Lentinula edodes] industry in the USA, with emphasis on cultivation on nutrient-enriched sawdust media in plastic bags (synthetic logs). The production of these synthetic logs and the conversion of existing mushroom cultivation houses for the cultivation of shiitake are described. The cropping cycle, contamination problems, harvesting, postharvest management, and production and marketing are discussed. Although production of shiitake on synthetic logs is less important economically at present than cultivation on natural logs, there is a great potential for its future development.
