Production, consumption, industrialization and trade in potatoes in Costa Rica are evaluated. A 25% increase in production was observed in the period 1986-90, from 43 000 t to 55 000 t. With regard to trade, more potatoes than any other product were sold in the municipal markets. Potatoes occupy an important place in the national diet, with an average annual per capita consumption of 18.2 kg in fresh form, which is higher than that of other roots and tubers. An increase in the consumption of processed potato was also observed, in the form of French fries and crisps. It was estimated that the annual consumption of the processed form absorbs 10% of national production. It was concluded that the potato trade expanded owing to an improvement in the information system about prices in the main markets and the start of the agricultural products stock market which includes potatoes.
