Factors affecting woolliness in peaches and nectarines (such as cultivar susceptibility, climate, physiological maturity at harvest, precooling, and storage temperature), methods for controlling woolliness (including controlled atmosphere storage and intermittent warming during cold storage), and changes in pectin metabolism, enzyme activity and cell wall ultrastructure associated with the development of woolliness are reviewed.
