Postharvest asparagus technology. Industrial processing.

Lignification during the first 24 hours after harvest reduces the processing quality of asparagus spears. Rapid cooling to 2 deg C is recommended to avoid this problem; this can be achieved either by hydrocooling or, if the asparagus fields are close to cold stores, by covering pallets with a wet sackcloth until storage. Production of canned asparagus is described and prospects for modified atmosphere packaging and freezing of asparagus spears are discussed. Results are cited of a trial in which cultivars Argenteuil, Cipres, Darbonne 4, Mary Washington, Norte, Sur and UC-157 were evaluated for canning quality. Cipres gave the best results.
