The nondestructive system of the Commission International d'Eclairage (CIE) for colour assessment in fruits was used to measure chlorophyll (Chl) in senescing watercress leaves. The extractable Chl values of leaves at different senescence stages were correlated with their quantitative colour specifications, based on CIE-L, a and b values, by the use of reflectance spectroscopy. Experimental evidence was based on correlation of 46 determinations of extracted Chl values (mg Chl/g FW) in watercress leaves with their corresponding calculated L, a and b values and functions: hue angle (H deg ) and total colour difference ( DELTA E). The Chl content of watercress leaves correlated better with b and L values and the DELTA E function, than with the a value and the H deg function. The best correlation (R2 = 0.868) was obtained between the single function number of DELTA E and the extractable Chl values. Based on this correlation, a formula was derived for routine and nondestructive evaluation of Chl content in senescing watercress leaves.
