Regulation of sugar accumulation in stored potato tubers.

Hexose accumulation in potato tubers has considerable commercial significance and several research groups throughout the world are attempting to manipulate the phenomenon by exploiting the tools of modern plant biotechnology. The concept of manipulating the expression of single genes with known biological function to prevent sugar accumulation is an attractive one but a knowledge of the key processes and enzymes which regulate the tuber's sugar balance is essential if research is to proceed in a targeted fashion.
