Relationship between harvest time and senescence in kale leaves.

The objective of studies with kale was to establish relationships between the water content in leaves before harvest and postharvest senescence. The leaves were harvested at 06.00 and 13.00 h and stored in dark chambers at 24 plus or minus 2 deg C and 97 plus or minus 2% RH. Harvesting the leaves at 13.00 h, when they showed marked water deficit, resulted in a one-day postharvest delay in senescence, compared with leaves harvested at 06.00 h. The leaves harvested at 13.00 h recovered their turgor during storage. They also showed 2-fold and 3-fold higher initial contents of TSS and starch, respectively, than did the leaves harvested at 06.00 h and this was probably associated with the greater postharvest longevity.
