Postharvest handling and storage of pineapple cv. Smooth Cayenne fruits and their effects on fruit quality are reviewed. Although Smooth Cayenne is the main fresh fruit cultivar, it is very acidic and more suited for canning. A high yielding cultivar with a long storage life and more appealing flavour should be selected. Preharvest weather and fertilizer application can significantly influence fresh fruit acidity and sugars as well as susceptibility to chilling injury. Postharvest handling is designed to minimize injury and remove all fruits not suited for the fresh market. The major postharvest problems, diseases and chilling injury, are currently controlled by fungicide application and waxing, respectively.
