บทคัดย่อ

Challenges in handling fresh fruits and vegetables.

Current approaches to postharvest handling of fruit and vegetables from farm to consumer are outlined covering production phase operations, harvest, packing, transportation, storage and retail distribution. It is proposed that a more integrated approach to postharvest research should be adopted and the concept of a systems approach is introduced. Aspects of postharvest handling which may be tackled by a systems approach are discussed, including latent damage and its detection, stress physiology, quality management, marketing, and food safety.
