Recent advances in the postharvest physiology, storage and handling of green asparagus.

Asparagus spears deteriorate rapidly after harvest. Refrigeration is the primary means of retarding quality loss; however, modified atmosphere packaging may have potential for maintaining quality at shelf temperatures. Only small increases in the storage life of asparagus are likely from refining existing technology. An understanding of the factors initiating and regulating postharvest senescence is required if major gains in extending the postharvest life of asparagus are to be achieved. Recent studies have demonstrated rapid and major changes in the physiology of harvested asparagus. Many of these changes begin before the spears even reach the cool room. Identification of key processes regulating postharvest senescence will open the possibility of modifying the passage of senescence to extend postharvest life.
