Relationships between preharvest variables and postharvest physiology of pome fruits are reviewed under the following: interface between preharvest and postharvest physiology; mineral nutrition and postharvest changes (N, Ca, K, Mg, P, B); maturity; effects of cultural practices on postharvest quality (rootstocks/tree age, soil management, training/pruning, pollination/seed number, chemical sprays and growth regulators); effects of climate on postharvest quality (temperature, light and water) and chilling injury. It was concluded that mineral content (as affected by cultural practices), harvest ripeness and susceptibility to chilling injury are the most important factors affecting postharvest quality retention of pome fruits.
