In order to optimize postharvest fruit quality, a performance evaluation method is presented using the example of early raspberries. Analysis of the production process showed that the critical points for postharvest quality were harvest conditions, delay before refrigeration and conditions of storage and transport. Criteria for determining performance were developed for each stage and improvements in the process are suggested.
