Twelve sweet potato cultivars, grown in the field in Kumamoto, Japan, were analysed for DM percentage, fructose, glucose, sucrose, maltose, beta -carotene and amino acids. DM percentage ranged from 19.2 to 41.3%, fructose from 1.16 to 17.56 mg/g, glucose from 0.60 to 18.05 mg/g, sucrose from 8.9 to 30.9 mg/g, maltose from 1.8 to 131.4 mg/g and beta -carotene from 1.1 to 236.6 mg/100 g FE. The contents of 18 amino acids are tabulated.
