This book, in the collection 'Le Point sur', is a translation of the publication Manual on mushroom cultivation edited by TOOL and published in 1991 and aimed at growers in developing tropical countries where cultivation of edible fungi is of potential economic interest. The first 5 chapters discuss the biology of edible fungi, substrate characteristics, spawn and genetics (including conservation of strains), pests and diseases, and protection of the environment using an integrated approach. Chapters 6 to 8 give information on determining the feasibility of cultivating edible fungi under different conditions, with examples presented of commercial production in a number of tropical countries; subjects covered include aspects of the production of different species, the potential for selling on the local market and exporting, organization, and development and cost models. Chapters 9 to 15 deal with practical aspects of mushroom cultivation, including types of mushroom houses, preparation and quality control of spawn, cultivation (particularly of Lentinus edodes [Lentinula edodes]) on tree logs, cultivation on fermented substrates (Agaricus and Volvariella spp.), pasteurization and immersion in hot water, cultivation on sterilized substrates in plastic bags, and postharvest treatment. As well as a bibliography, glossary and index, there are appendices on pests and diseases, culture collections, conservation of strains, allergy to spores, and useful addresses.
