Current maize drying practices in Thailand and the Philippines are discussed. A new approach to maize drying is proposed, in the form of a 2 stage drying process. The first stage can be performed in a variety of ways to reduce the m.c. to about 18%. The second stage requires the m.c. to be reduced to 14% w.b. This can be achieved by either high temp. drying or near-ambient in-store drying using RH controllers. For an initial maize m.c. of less than or equal to 19% w.b., preliminary experiments indicated that near-ambient in-store drying was able to control the build-up of aflatoxin B1 in maize when used for second stage drying.
