Low temperature preconditioning to improve shelf life of fresh market carrots.

The effects of holding carrots (cv. Cello King) at 1 deg C for 1, 4 or 14 days prior to being placed under simulated shelf conditions (13 deg , >95% RH) on weight loss were investigated. Sections of roots were taken from carrots that had 4 days of preconditioning and carrots with no preconditioning to determine the distribution and extent of suberization and lignification. Carrots that were preconditioned at 1 deg for 4 or 14 days showed significantly less weight loss (approx. 30% less) and maintained a brighter orange appearance than unconditioned carrots. Preconditioning enhanced deposition of suberin on the surface of the periderm and lignification of subsurface cell layers. These 2 changes are suggested as possible mechanisms for reduction of weight loss and discoloration of carrots held under shelf conditions.
