Modified atmosphere packaging (high CO2/low O2) effects on market quality and microbial growth in broccoli spears under temperature abuse conditions.

Packaged broccoli spears (cv. Iron Duke) were stored at 20 deg C and 60% RH for 96 h. Levels of CO2, O2 and ethylene within the packages were monitored daily by GC. At each time interval (24, 48, 72 and 96 h) samples of stem and florets were analysed for reduced ascorbic acid, moisture content, chlorophyll, peroxidase activity, microbial growth and texture. Concentrations of O2 and CO2 within the packages equilibrated to about 2.5 and 8%, respectively, within 24 h and remained almost constant over 96 h. Reduced ascorbic acid content was significantly greater in packaged than in non-packaged broccoli (82 vs. 54% retention). Moisture content was greater (88.3 vs. 86.1%), peroxidase activity was lower (86 vs. 142%), Instron shear values were smaller (1.0 vs. 1.4 kg/mm) and total chlorophyll retention was greater (99 vs. 37%) in packaged broccoli compared with non-packaged broccoli after 96 h. No significant differences were found in total aerobic microorganism population growth between packaged and non-packaged broccoli.
