Evolution of quality parameters of Jonagold apples by means of non-destructive methods

Stiffness (related to fruit firmness), colour and weight were measured for one Jonagold apple fruit in order to evaluate new non-destructive methods for monitoring fruit quality from harvest until consumption. The fruit was harvested and stored for 6 months (one month at 2 deg C in air plus 5 months of ultra-low-O2 storage). After storage, the fruit was kept at 18 deg and 65% RH. Variables were measured at harvest, after storage and 4 times during 16 days of shelf-life. Stiffness was estimated using resonance frequency and the colour of the whole fruit was recorded with a camera. The images were digitized by means of a TARGA software system. The change in stiffness and resonance frequency after storage correlated well with the quadratic model obtained from regression. Development of weight after storage showed an almost linear path with time. Data for colour were divided into red and green clusters and were used to mathematically plot the evolution of colour in Jonagold fruits.
