Quality, ethylene production and tissue structure of mung bean sprouts exposed to preharvest treatments of 2,4-D and ethephon.

Vigna mungo sprouts were treated with 2,4-D (25 mg/litre) or ethephon (10 mu l a.i./litre) 48 h after germination. Sprouts were harvested 48 h after treatment and evaluated for fresh weight, hypocotyl length and diameter, root length, vitamin C content, storage life and cell structure. Treated sprouts had shorter roots (2.7 cm for 2,4-D- and 3.0 cm for ethephon-treated sprouts) and hypocotyls (3.2 and 4.56 cm) and greater hypocotyl diameters (0.32 and 0.27 cm) than control sprouts (6.30, 6.20 and 0.20 cm, respectively). Vitamin C contents of treated and control sprouts were not significantly different. Sprouts treated with 2,4-D had a storage life of 2 days compared with 14 days for control and ethephon-treated sprouts. Ethylene production rate was highest in the ethephon-treated sprouts throughout the storage period. It was concluded that ethephon application resulted in better quality sprouts than 2,4-D application.
