Changes in cell wall materials during ripening of tomato fruits.

Studies were carried out to determine whether cellulose and hemicellulose derived from cv. Jangsu and rin tomato cell walls are involved in fruit softening. The effects of mannose and galactose on ethylene evolution and fruit ripening were also investigated. Hemicellulose in cell walls decreased in Jangsu tomatoes but not in rin tomatoes. During ripening, hemicelluloses of Jangsu and rin lost 84 and 15% of their mannose residues, respectively. A slight loss of hemicellulosic galactose residues occurred from cell walls of both normal (Jangsu) and rin tomatoes. Normal tomatoes infiltrated with mannose and galactose showed a peak of ethylene production 21 and 27 h after treatment, respectively. Water infiltration of fruits did not promote ethylene production. Mannose also stimulated ethylene production in rin tomatoes.
