In order to obtain optimum quality fruits after storage and to reduce susceptibility to storage disorders in Jonagold apples the following aspects were studied: optimum characteristics at picking time; % fruit to be picked on each picking date; optimum starch content for optimum maturity at each picking time; optimum storage conditions and ripening characteristics during storage. The variability in maturity and storability of Jonagold apples makes it necessary to pick the fruit on different dates, between 3 and 5 times. For the first picking time, a starch content of 50-60% (dark surface) with a firmness >5.5 lb/0.5 cm2 and a fruit weight <220 g/fruit is recommended. For the middle and late picking times, a starch content of 40-50% (dark surface) and a sufficiently green ground colour (<7 on the Belgian VBT colour chart) is required. Ultra-low O2 (ULO) storage at 1% O2 with 1.5-2% CO2 at 0.5-1.0 deg C gave firm, green fruits of high quality with a low susceptibility to storage disorders, including scald, even after a long storage period.
