Gel breakdown in Prunus salicina - an ultrastructural study.

Songold plums stored at single (28 days at -0.5 deg C followed by 7 days at 10 deg ) and dual (raising temperature after 10 days at -0.5 deg ) temperature regimes were used to study the relationship between ultrastructural changes in mesocarp cell walls and the development of the disorder gel breakdown. Ultrastructural changes in mesocarp cell walls were studied during storage using transmission electron microscopy. Cellulose breakdown in fruits stored at both temperature regimes was not affected by differences in temperature. Low temperature storage (single regime) inhibited breakdown of pectic substances when compared with fruits stored at dual temperature. Gel breakdown developed in both single and dual regime stored fruits and displayed symptoms similar to woolliness in nectarines.
