Latent damage (damage to fruit and vegetables which is not immediately apparent) is discussed with reference to bruising, quiescent infection, physiological disorders, postharvest stress disorders and superficial scratches. The importance of latent damage to quality maintenance and its implications in terms of produce deterioration are considered.
