บทคัดย่อ
The volume of interstitial gases of 8 fruits (apples, bananas, grapes, limes, mangoes, oranges cv. Mosambi, mandarins and pineapples) and 7 vegetables (ash gourd [Benincasa hispida], beetroots, carrots, cucumbers, Mangalore cucumbers, potatoes and radishes) were determined. The internal gas volume varied from 1.2 ml/100 g in grapes to 43.8 ml/100 g in pineapples. The oxygen content of the internal air of the fruits and vegetables held under ambient conditions ranged from 14.0 to 19.2%.
