Harvested apple fruits were placed in gastight units and stored in a controlled atmosphere (CA) at 2 deg C. Controls were stored in a cold store at 2 deg and 88% RH. Three gastight units were stored under 2% O2 + 2% CO2 and 3 units under 3% O2 + 3% CO2. After each of 3 CA periods (115, 142 and 169 days), one set of samples was analysed immediately for weight loss, ground colour, shrinkage, diseases, disorders, fruit firmness, % SS, titratable acidity, ascorbic acid content and flavour. A 2nd set of samples was analysed after one week in a cold store and a 3rd set after one week in a cold store followed by one week at room temperature (18-20 deg , 25-30% RH) simulating shelf life. Weight loss was 0.6%/month for CA storage compared with 1.5% in cold storage. CA storage also controlled Gloeosporium album [Pezicula alba] and G. perennans [P. malicorticis]. Fruits undergoing simulated shelf life experiments showed a severe loss in quality after storage with damage from Gloeosporium rot, wilting and over-ripeness. CA storage delayed the maturity process, controlled weight loss and resulted in better eating quality during shelf life.
