A study of the actual durability of the harvest period of 'Gravenstein' apples.

Starch degradation in apple fruits during ripening was studied. Fruits were picked in 5 consecutive weeks covering the actual harvest season for the cultivar and samples were analysed using the starch-iodine test. All samples showed a more or less uniform degradation of starch. From the results of previous storage trials which included quality evaluations of fruits it is recommended that fruits of this cultivar should be picked at a maturity stage represented by 50-60% dark coloured cut surface when using the starch-iodine test. Fruit samples showed a pronounced variation in maturity development especially in the middle of the harvesting period. In order to meet the requirement of picking apples of equal maturity it is recommended that the harvest of Gravenstein apples should be divided into 2 or 3 pickings over a maximum period of 3 weeks.
