Variability in maturity, quality and storage ability of Jonagold apples on a tree.

Starch content, green-yellow colour, firmness, Brix value and fruit weight were measured in apple fruits harvested on 23 Sep. or 4, 11, 18 or 25 Oct. Early harvested fruits were insufficiently developed, had low sugar contents and were more sensitive to scald than late harvested fruits. Late harvested fruits were softer and more sensitive to internal breakdown during storage. Data are tabulated for the percentage of fruits ready for harvesting on each date; these ranged from 1.9% at the 5th picking date to 47.4% at the 3rd picking date. Optimum starch contents for optimum maturity at each harvesting date and quality values for fruits after 6 months' storage are tabulated. Using the data it should be possible to reduce the number of harvesting dates from 5 to 3.
