A review of the different methods of raisin production around the world is presented, with reference to their suitability for use in India, under the following headings: nutritive value of raisins; choice of cultivars for raisin preparation; preparation of grapes for raisin making; lye treatment; oil treatment; fumigation with SO2; drying and moisture equalization; and packaging and storage.
