The importance of optimizing eating quality of fresh pineapples in Queensland and factors affecting it are discussed. Fruits are produced throughout the year and can come from areas up to 1500 km apart with widely different production parameters. Major factors affecting the eating quality of fresh market Smooth Cayenne fruits are harvest season, production area and fruit maturity. In Queensland, factors that affect commercial harvest maturity include non-climacteric physiology, black heart development and the variability of consumers' preferences. A model for understanding the development and variation of pineapple eating quality is presented and discussed. The model predicts that, for any one season, a low ratio of fruit-mass to leaf-area results in fruits with the best eating quality.
