บทคัดย่อ
The influence was investigated of temp. and thermal treatments on endopolygalacturonase activity in R. nigricans [R. stolonifer], the agent responsible for the softening of apricots canned in Murcia, Spain. The temp. for max. activity of the enzyme was 50 deg C. The endo character of the enzyme preparation was also highest at this temp. The enzyme showed bimodal behaviour in response to thermal treatment with high thermostability between 90 and 100 deg and strong inactivation at 70 deg . When the enzyme was treated at 90 and 70 deg consecutively, the inactivation at 70 deg C was smaller.
