Improving village-level processing in developing countries: the case of potatoes.

Two commercial Egyptian Ipomoea batatas cultivars (17-8 and Mabrouka) and 5 breeding lines from Taiwan were evaluated during the 1988-90 seasons for root chemical composition and quality after 120 days storage in polyethylene mesh sacks. Line Hub-Krapong produced the highest dry matter (37%) and percentage starch (14), and although line CN1424-36 was the lowest in these respects, it had the highest concentration of total sugars (3.7%) and carotenoids (42.8%). Increases in weight loss, decay and sprouting during storage showed significant varietal differences; the effects worsened with time in storage. Weight loss was least for line CNIO38-18 (17.5%) and cv. 17-8 (22%), which together with Mabrouka showed the lowest rate of decay (12.5, 20 and 19%, respectively). Resistance to sprouting was best in Hub-Krapong, AIS243-2-1, 17-8 and VNGBUAY.
