Sorghum cv. HES2, HES3, HES4, HES6, HES13, CSH1 and CSH5 were harvested 1 week after maturity and green stems were crushed after 0, 24, 48, 72 or 96 h storage at room temperature. Stem weight and percentage juice yield decreased and juice brix and juice pH increased with delay in crushing. Juice yield was highest in cv. CSH5 (37%) followed by CSH1 (33.7%) and HES2 (33.1%) and it was lowest in HES6 (27.6%).
