บทคัดย่อ

Reduction of legume antinutritional factors using biotechnological techniques.

The review shows ways in which biotechnological techniques may help in the management of antinutritional factors by genetic elimination from plants and postharvest treatment. It is noted that gene transfer in legume species has proved difficult but that the application of ribozyme technology (gene shears) or antisense genes to prevent expression of functional genes has potential. Microbial enzymes derived from existing or biotechnologically modified organisms are seen as another possibility for eliminating antinutritional factors.
