Visual inspection and sorting: finding poor quality before the consumer does.

The design and operation of fruit and vegetable sorting equipment are discussed covering table size, translation speed, product loading, rotational speed, sorter position, lighting, location of reject chutes and conveyors, and defect type. Techniques for analysing the sorting operation are presented, with reference to sorting performance, modelling of sorting operations, empirical models, and signal detection theory. Economic aspects of sorting operations are also considered.
