Consumer perception of quality and acceptability in fresh fruit and vegetables is considered together with a discussion of commodity-specific quality attributes. Maturity indices are outlined with reference to measuring maturity and evaluating the effects of maturity on quality. Quality measurement by visual evaluation, colour, texture, flavour and nutrients, and sensory evaluation techniques are discussed.
