Heat of respiration of a crop is a part of the refrigeration load that must be considered in designing cold storage rooms for produce. This study was undertaken to develop a mathematical algorithm for the heat of respiration of produce when stored at different temperatures. The crops studied were grouped in such a way that a commmon mathematical equation could be used to estimate the heat of respiration. The equation used is of the sigmoidal transition type, and constants were found for 76 fruits and vegetables.
