Effect of insect infestation on the organoleptic characteristics of stored cereals.

In laboratory experiments, grains of sorghum, wheat and maize were sterilized, placed in jars and artificially infested with larvae of Tribolium granarium and/or adults of Rhizopertha dominica [Rhyzopertha dominica]. The infestations were halted by fumigation when 25, 50 or 75% of the grain was damaged. Chapatis made from flours from the infested grains had acceptable colour, appearance, aroma and texture but taste was detrimentally affected by damage to 50 or 75% of the grain. It is suggested that a build-up of uric acid in the grain was responsible for the poor taste.
