The processing of cassava roots into the most common staple form of food, gari, is normally carried out by women. The unit operations of gari production include peeling, washing, grating/grinding, dewatering and fermenting, and garification or frying which involves heat treatment using an open fire and pan. Ergonomic studies were conducted on this operation, including the comfort and work environment of the operator. Sitting posture and excessive heat were found to be 2 of the main factors that affect the comfort and the arm-reach of the operator when gari is made in the traditional way. Improved designs which reduced heat and changed the sitting posture were found to increase efficiency.
