ABSTRACT
The introduction of north European machinery without consideration of its suitability in the local environment can present problems. To improve the financial returns of potato production in Italy two suggestions are made: conservation of potatoes on the farm for sale when returns are high and postharvest treatment to present an attractive and standardized product. Systems for ventilation of potato stores with ambient or cooled air are discussed with reference to seasonal and geographical variables. Equipment for handling, sorting, weighing and bagging potatoes is briefly described. Methods of sowing, tending and harvesting potatoes for maximum quality are considered. Technical assistance at the regional level is needed to promote selection of appropriate potato varieties, cultural methods and postharvest practices and to achieve the best possible commercial results.
