ABSTRACT
The harvesting, handling and transport, storage, marketing and postharvest losses of plantains in Ghana are briefly discussed. The major cultivars grown are Apantu (False Horn) and Apem (French Plantain). Harvest maturity is usually determined visually, based on experience. Fruits are packed and transported in a variety of ways, but are usually over packed and unprotected from the heat of the sun. Refrigerated storage is not considered a realistic prospect. Although postharvest losses are difficult to quantify as plantains are consumed at all stages of ripeness in Ghana (when the peel is green, yellow or even black) a nationwide survey in 1992 estimated them to be only 0-5%, mainly resulting from poor harvesting, handling, storage, packing, transportation and marketing techniques.
