ABSTRACT
Following general discussions on fruit physiology, causes of deterioration (physiological disorders, pest/disease damage and mechanical damage), and techniques for protecting fruits, detailed accounts are given for 41 types of fruits and nuts. Various disorders, and fungi and bacteria causing spoilage are listed for each fruit, and the effects of some of them are illustrated with colour photographs; notes on storage requirements are also provided. Protection methods include physical techniques (such cold storage and irradiation), chemical techniques (such as pesticides and growth regulators) and, potentially, biological control methods. A bibliography and list of useful addresses are appended.
